02 · Our craft
Not cooked.
Conjured by fire.
Most kitchens apply heat. We apply character. Oak and coconut shell burn at 900°F in our hearth, giving every plate a smokiness no gas flame can imitate. Spices are ground in small batches every morning. Breads blister in 90 seconds. Desserts get their finish from a blowtorch, not a oven shelf.
